Lets say you’ve been really good with pursuing a healthy lifestyle with learning about the ins and outs of living a balanced life and a healthy life.
Sometimes the holidays and family get togethers can easily turn into a whirlwind of emotions when it comes down to food. I know this because I’ve dealt with this. With visiting family and loved ones sometimes they have food and goodies you typically don’t eat so this is your chance to TAKE IT ALL IN!
Don’t fret fit family I got your back this holiday season. I have concocted a HOLIDAY PROTEIN COOKIE for you! WOOHOO! Yes, I’m equally as excited as you are about devouring these guilt free nutritious cookies!
Here’s how I made them:
- 1 pkt ( roughly 2 scoops ) Isagenix Isalean Pro protein natural vanilla flavored
- 1 C. coconut flour ( can be substituted )
- 1 tsp baking powder
- 1/2 C. stevia
- 1 egg beaten
- 1/4 C unsweetened vanilla almond milk – 1/8 C ( set aside for when mixing )
- 1 Tbsp kerrygold butter ( coconut oil works too or traditional butter )
- pinch salt
- 2 tsp vanilla extract
- 1/4 water
Preheat oven to 350 degrees cook time 9-11 minutes
In a large mixing bowl using an upright mixer or hand beaters mix all dry ingredients. Once this is all sifted through turn your mixer on low adding beaten egg, butter, vanilla extract, 1/4 almond milk, 1/4 water. Once this is mixed the mixture will look crumbly using the 1/8 cup you set aside add a little as desired if you feel it’s too crumbly. I added the full 1/8 cup and then the mixture started adhering together. You want to be able to squeeze the mixture together and have it stay firm.
I used parchment paper and made my cookies into a bite sized balls. Once these were all were made I flattened them with a fork tossed on some sprinkles and popped in the oven. I cooked for 9 minutes and put on a cooling rack. Made 14 cookies.
